Spring Wedding Drinks

Spring is almost here! Like most Canadians, we are certainly very excited about the warm weather and change of season. Aren’t you sick of this snow?! Like the specialty drink connoisseurs that we are, we are also excited about the changing drink menus at Spring weddings! It’s time for bright, fruity flavours and beautifully dressed drinks. Here are some of our favourtie Spring wedding cocktails.

Strawberry Rhubarb

Mmm, this drink reminds us of summer’s strawberry rhubarb pie. This is the most complicated recipe, but we guarantee that it’s well worth it.

1 1/2 cups rhubarb, ends trimmed and roughly chopped
1 pint strawberries, stems removed and halved
1 cup granulated sugar
1 1/2 cups water
2 litres seltzer
Vodka to taste
Mint sprigs, for garnish

Directions: In a medium saucepan combine rhubarb, strawberries, sugar and water. Bring ingredients to a boil and reduce heat to a simmer. Cook for about 10 to 15 minutes or until fruit is mushy and syrup is a bright pink color. Mix all ingredients and garnish with mint.
